Allergen Free Wine May Be Coming Soon

Researcher, Giuseppe Palmisano, has been studying the glycoproteins that are within wine to try and isolate the cause of these allergies. He has found that in one Italian Chardonnay there are as many as 28 of these glycoproteins that have the same cell structure as many known allergens.
By isolating these glycoproteins maybe one day winemakers will be able to make wines that are free of these materials. This would allow more people to raise a glass of fine wine with friends to toast a holiday or special event, or just enjoy a great tasting wine.
Until then the best gift that those who suffer from these wine allergies can receive is not a bottle of well crafted wine but instead wine art such as Cold Duck by Will Bullas.
